Sugar Flower Classes
I am excited to announce another round of sugar flower classes being held this coming January/February 2027. We will be exploring ‘the classics’, those flowers that pop up time and time again in arrangements, but aren’t always the simplest flowers to execute in sugar. I’m looking at you peonies, roses, sweet peas, lisianthus, and hydrangeas. We might even throw in a delphinium or two in there for good measure.
Of course we will learn how to make these flowers from start to finish, you will see which cutters I use, how I shape & dry the petals, what gage of wire I use, etc, but I think the meat of these classes are all the nuances that you wont get from an online tutorial. How are my fingers interacting with the gumpaste, how am I holding each tool to get that perfect angle, how do I bend the wire just so to get the movement exactly how I want it.
On top of that, you’ll get to pick my brain for three days, I am truly an open book and last year my four lovely students peppered me with questions both about sugar flowers and other aspects of the cake design business. We talked about workflow for sugar flower production, proposals, tastings, covering tiers in fondant, pricing, client relationships, - nothing is off the table.
On day three, once we all had our flowers complete, assembled, and dusted, I demonstrated how I go about arranging flowers on a cake. They got a peek into my brain on how I approach a blank canvas. I would say this is such an important step in the process, because who cares if you can make beautiful flowers with tons of movement, if they just end up static on the cake? Then, I challenged my students to arrange their own flowers, without copying what I did, just keeping in mind the process and elements of design we discussed.
The results were incredible – four fabulously different cakes – starting with the same ingredients (one of these students had barely touched gumpaste before this class – and I bet you cant even guess which one!)
I was so proud of my students – and turns out I really loved sharing the skilled I have homed over the past decade of creating this art.
I hope you can join me for a future class – please feel free to email me with any questions or fill out the contact page on the website.
